Roasted Garlic and Fresh Herb Marinated Flank Steak

yield: about 6 servings

marinade:
-1 head roasted garlic
-1 pkg. fresh thyme
-½ pkg. fresh rosemary
-1 tbsp. Aromatica Organic Nebraska Prime Steak Seasoning
-1 cup lemon juice
-1 ½ cups olive oil
-2 flat iron steaks roasted

garlic:
cut the top off of a head of garlic and drizzle w/ a little olive oil, season w/ salt and pepper and wrap in aluminum foil, place in pre-heated 425 degree oven for 30-40 min. or until soft and browned

marinade:
in mixing bowl, mix all marinade ingredients, pour into plastic bag and add steaks, push out air and marinate in the refrigerator overnight

preparing steak:
pre-heat grill to med-high, take steaks from marinade and season lightly w/ Aromatica Organic Nebraska Prime Steak Seasoning, place on grill and cook about five min. per side for med. rare, remove from grill and let rest at room temp. about 10 min., steak may then be sliced against the grain and served w/ favorite sauce
