Ingredients
4 slices dense bread
1 ½ -2 cups vegetable or chicken stock
3 tablespoons sliced almonds
1 garlic clove
2 cups garbanzo beans
3 tablespoons white wine vinegar
3/4 cupextra virgin olive oil
Salt and cayenne pepper
Garnish suggestions:
¼ cucumber, peeled, seeded and diced
¼ poundseedless green grapes
Directions
1) Remove the crusts then set the bread aside to soften in 1 cup of suggested stock amount.
2) Lightly toast the almonds in a small skillet over medium-low heat until golden, about 7 minutes. Transfer the almonds to a food processor add the garlic and pulse until the almonds are finely ground.
3) Add the garbanzo beans and puree.
4) Squeeze the bread as dry as possible and add it to the almonds. Process until the mixture is smooth.
5) Add the oil and vinegar to the mixture. Add additional stock to desired consistency.
6) Season to taste.
