Ingredients
4 firm peaches cut in half and cored
2 Tablespoons unsalted butter
4 Tablespoons light brown sugar
Pinch of cinnamon
16 oz cottage cheese
Melba Sauce2 pints fresh raspberries
2oz. water
1/4 cup sugar
2oz. red currant jelly
1tbsp. fresh lemon juice
Directions
Melt butter, brown sugar and cinnamon in a pan.
Stir mixture. When mixture is melted, brush on peaches inside and out.
Grill peaches on medium heat 3-4 minutes per side.
Melba Sauce
In a sauce pan add raspberries, water, sugar, jelly and lemon juice. Bring to a simmer and let simmer for 1 minute. Pour mixture into a food processor or blender to puree the mixture. Pour mixture through a strainer.
Place 4 oz cottage cheese in serving bowl. Then put 2 peach halves on each side and drizzle Melba Sauce over the dish.
