Tomato Concassee

Ingredients

Tomatoes, any  variety

Directions

1) Set up a large bowl of ice water.

2) Wash tomatoes. Mark the bottom of the tomato with an “X”.

3) Submerge in boiling water until the skin starts to ripple.

4) Immediately remove from boiling water and place in ice bath.

5) Once cool, peel skin and cut each tomato into a wedge. Remove seeds then chop.
